α-淀粉酶可水解由三個或多個α-(1,4)連接D-葡萄糖單元組成的多糖的α-(1,4)葡聚糖鍵。 淀粉和糖原等天然底物被分解成葡萄糖和麥芽糖。 豬胰腺α-淀粉酶是一種糖蛋白,由約475個殘基組成的一條多肽鏈(包含2個SH基團和4個二硫鍵)以及一個緊密結合的Ca2+ (穩定性所必需的)組成。 最適pH為7。活力定義:One unit will liberate 1.0 mg of maltose from starch in 3 min at pH 6.9 at 20 °C.從豬胰腺中分離的α-淀粉酶是一種糖蛋白。它是由約475個殘基組成的一條多肽鏈(包含2個SH基團和4個二硫鍵)以及一個緊密結合的Ca2+ (穩定性所必需的)組成的。氯離子是活性和穩定性所必需的。活性pH范圍為5.5至8.0,最適pH為7。

溶解性: Store  the  product  at  2–8℃.  Solutions  of  α-amylase  in25  mM  Trizma-HCl,  pH  7.5,  with  100  mM  KCl  are  stable  at  0℃  or–20℃  for  at  least  9  days.  Solutions  in  1  mM  phosphate,  pH  7.3,  with  30  mM  CaCl2  may  be  stored  at  –15℃。溶解后有部分沉淀,是提取時候的載體,可以過濾或者離心取上清液使用,不影響酶活。
儲存條件: 2-8℃
用途: 能使淀粉迅速液化而生成低分子。
